Muesli Bites

Equipment Needed

8 x 8 x 2 baking pan or mini muffin pans

2 bowls & rubber Spatula

Measuring cups & spoons

Chef’s knife

Cutting board



Ingredients

3-cups Bob's Red Mill fruit muesli

1/4 cup flax meal

1 cup 1/4" diced dates

1/2 currants

1 teaspoon cinnamon

1 teaspoon ginger powder

1/2 teaspoon salt

1/2 cup apple sauce

3 each "very" ripe bananas

1/2 cup sunflower or almond butter

1/2 maple syrup

1 teaspoon almond extract


Directions

Preheat oven to 350 degrees.

Dice your dates into 1/4" (Trader Joes has per-diced).

Combine muesli, dates, currants, spices and set aside.

In another bowl smashed the banana with a fork, and combine applesauce, nut butter, almond extract and maple syrup.

Combine all of the ingredients together and either place in an oiled 9X9 baking pan or spoon into mini muffin pan above (just not that if you are using a non-stick pan the muffing papers are not necessary, spray the muffin pan with pan release (I use coconut).

Bake for 45 minutes, yummy
