Mung Bean-Barley Burgers

Mung Bean Burgers

These Mung Bean-Barley Burgers are Sattvic (pure), promoting peace and harmony. Both mung beans and barley are easy to digest and aid in detoxification by helping to clear toxins. They contain high fiber and help stabilize blood sugar levels, increase bile, metabolize fat, and support the healing process.

 

Ingredients

2 tablespoons of ghee or olive oil

¾ cup Mung (moong) beans

½ cup of barley

½ cup ¼” diced onions

½ cup ¼” diced carrots

½ cup ¼” diced shiitake mushroom

**2 Tablespoons spices or herbs (see below)

2 Tablespoons apple cider vinegar

2 Tablespoons maple syrup or honey

2 eggs

¼ cup Dijon Mustard

¼ cup catsup

 

Want to give it a Mediterranean touch? Add 1/4 cup each of olives, sun-dried tomatoes, or goat cheese.

 

Directions:

  • Soak the mung beans and barley separately in water for at least an hour before cooking.

  • Dice the onions, carrots, and mushrooms into ¼” pieces, set aside.

  • Simmer the barley in lightly salted water for 25 minutes. Remove from the heat and let it cool.

  • Simmer the mung beans in lightly salted water for 45 minutes, then remove from the heat and let cool in the liquid before straining. After cooling, smash or puree half the beans in a food processor.

  • In a pan, sauté the diced vegetables in fat and cook for 3 minutes. Then, add the spice blend and continue to sauté until the vegetables are about halfway cooked. Next, add the vinegar and stir for about a minute. After that, add the maple syrup. Turn off the heat and set aside.

  • Combine the pureed beans, cooked vegetables, beaten eggs, mustard, and catsup.

  • Finally, fold in the remaining beans and cooked barley, and season with salt and pepper.

  • If you're making burgers, sauté them in a pan and then bake them in the oven at 375°F for 15 minutes.

  • If you're preparing a loaf, oil the pan and bake it in the oven at 400°F for 30-40 minutes.

Notes:

** Seasonings: The spice blend (1 tsp cumin, 2 tsp dill, 1 tsp turmeric, 0.5 tsp each of pepper, lime powder, garlic powder, and salt) is balanced, and I can supply it to you. You can also use your favorite dry spices or fresh herbs. Taste the raw mixture before baking to ensure proper seasoning.
