Fall Apple Bread

Autumn is apple season, and this spiced apple bread balances Vata and Pitta but can be heavy for Kapha in excess. The recipe below can be adapted for vegan options by using coconut oil instead of ghee and replacing eggs with flax meal (1 egg = 2 tablespoons of flax meal mixed with water).
Apple Compote Ingredients
1 ½-2 cups of ¼” diced apples (I like using Fujis)
1 Tablespoon of ghee or butter
¼ cup of jaggery sugar or brown sugar
½ teaspoon of cinnamon
Dry ingredients:
1 cup Oat Flour
1 cup Almond Flour (our ½ almond meal)
1 teaspoon of baking powder
½ teaspoon of baking soda
¼ tsp of salt
¾ cup of jaggery or sucanat sugar
Wet ingredients:
2 eggs
1/2 cup of milk, either dairy or not, I like to use buttermilk.
½ of Ghee or melted butter
1/3 cup of apple sauce
1 teaspoon of almond or vanilla extract.
Instructions- Preheat Oven to 350 Degrees
1. Peel and dice apples into ¼” dice.
2. Cook the apples in ghee with jaggery or brown sugar for 5 minutes, then set aside.
3. Grease a 5x9” bread pan with cooking spray.
4. Combine all the dry ingredients, mix well, and set aside.
5. Combine the wet ingredients, including the apple compote, and set aside.
6. Mix all wet ingredients and apples with the dry ingredients, and place in a greased pan.
7. Bake at 350 degrees for 30 minutes, then cover with aluminum foil and finish baking for 30 minutes.
