Coconut Balls


High Protein Coconut Snacks

These coconut balls are great summer snacks and are very easy to make and are very high protein, cooling, grounding, balancing and very benefitical for pitta and vata but can increase the kapha dosha.



Yield- approximently 36 pieces


Equiptment needed: Food procossor, bowl, rubber spatula, measuring cups and spoons.


Ingredients:

1/2 cup dates, pitted and soaked

1/2 cup dried apricots, soaked

1/2 cup hemp powder

1/2 nut butter (I prefer sunflower)

1/2 cup coconut, dessiccated (powdered) perferrably (for recipe)

1/2 cup coconut, desiccated (powdered) preferrabley (for coating)

1/2 cup coconut flour

1/2 cup coconut oil

1/2 tsp. cardamom

1/4 tsp. salt


Instructions:

  1. Soak the apricots and pitted dates in warm water, set aside.

  2. Combine the coconut, flour, hemp powder, cardamon and salt, set aside.

  3. Drain the fruit and pulse in the food processor until smooth, add the coconut oil, nut butter, and combine.

  4. Add the dry ingredients and pulse until in combines, and slightly pulls away form the sides the of bowl- NOTE, if the mixture is too wet add a small amount of coconut flour or too dry add additional coconut oil, but use small amounts.

  5. In a seperate bowl place the additional coconut.

  6. In your hands roll bite size bowls, and then coat them with the extra coconut.
