Dates and Almonds

These yummy Date & Almond snacks support bone health and reduce the risk of osteoporosis due to their rich bone-strengthening nutrients, which inhibit the breakdown of bone and help build structure.  Almonds and dates contain calcium, magnesium, phosphorus, copper, selenium, protein, Vitamin D, E, and antioxidants.

 

Equipment Needed

Small pot for boiling water

Strainer

Paper/cloth towel

Bowl for tossing nuts with oil and spices

Sheet pan for roasting nuts

 

Ingredients

1 # Medjool Dates

4 oz. Whole Almonds – Peeled Preferred

1 oz. Olive oil or Ghee

2 Tbl. Tri-Doshic Spice Blend (optional) or salt

 

Spice Blend

How to peel almonds

1.   Bring a small pot of water to a boil

2.   Place the raw almonds in the boiling water for a minute

3.   Drain the almonds immediately in a strainer and rinse with cool water

4.   Push the almonds out of their skin with thumb and finger (I have experienced difficulty a few times with this process if the almonds are old, it is more challenging to remove skins)

 

Finish the Recipes

1.      Toss the almonds in a small amount of oil, and then the spice blend

2.     Place the almonds on a cookie sheet and bake at 375°F for about 15 minutes, until they are browned. Set aside and cool.

3.     Cut the dates in half (lengthwise), remove the pit, and then cut all the way through.

4.     You will take ½ of the date, place the roasted almond inside, and mold it back together.
