Holiday Energy Bars

These Holiday bars are very delicous and incorporate holiday staples like pumpkin, cranberries, and pecans; they're high in protein and fiber from quinoa and oats, and super digestive with cinnamon, cardamom, and ginger.
Although I am usually cranberries in this recipe you can replace with other fruits which add holistic benefits, sweetness and texure.
Cranberries reduce inflammation, are urinary tonics, support gut health and are antioxidants.
Raisins are high in iron, supporting hemoglobin and cardiovascular health, and are high in fiber.
Dates boost magnesium for muscles and nerves, and their fiber content supports digestion.
Tart Cherries are high in melatonin and assist with relaxation and sleep.
Figs are high in calcium and magnesium, which relax the muscles and quiet the nervous system.
Ingredients
1/2 cup pumpkin puree
1/2 cup mashed banana-ripe
1/4 nut or seed butter (I like sunflower butter)
2 eggs
1 cup quick oats raw
1 cup Quinoa puffed cereal or flakes
1 teaspoon bake powder
1 teaspoon each of cardamom and cinnamon,
1/2 teaspoon of ground ginger and mineral salt
1/4 cup maple syrup
1/2 cup Pecans, smashed
1/2 cup Cranberries, dried and chopped
Instructions
Preheat oven to 350 degrees.
Line a 8x8" baking pan with parchment paper and grease using cooking spray.
In a large bowl, mix the mashed bananas, pumpkin puree, nut or seed butter, eggs, maple syrup until smooth.
Mix the oats, quinoa, baking powser, spice and salt, combine and then fold into the wet ingredients.
Finally fold in the cranberries and nuts and combine.
Place in the baking pan and use a spatula to smooth out and even mixture.
Bake on the cneter rack for 25 minutes until the bars are firm to the touch
Cool, and then cut into squares.
