Quinoa Fruit Bars

Quinoa is a complete protein, and these bars supports digestion with its high fiber, helps control blood sugar with a very low glycemic index, supports the heart with antioxidants, and is gluten-free. It is packed with magnesium, iron, potassium, manganese, and B vitamins. 


Below are some possible fruit additions that add specific benefits and sweetness:


Raisins are high in iron, supporting hemoglobin and cardiovascular health, and are high in fiber.

Dates boost magnesium for muscles and nerves, and their fiber content supports digestion.

Tart Cherries are high in melatonin and assist with relaxation and sleep.

Figs are high in calcium and magnesium, which relax the muscles and quiet the nervous system.

Jujubes boost immunity, calm the nervous system, promote sleep, and are anti-inflammatory.


Ingredients

  • 1 cup dried fruit/s

  • 1 cup raw quinoa

  • 2 eggs

  • 1/2 cup milk (dairy or alternative)

  • 1/4 cup melted coconut oil

  • 2 Tablespoons of maple syrup

  • 1/2 tsp cardamom

  • 1/2 tsp ginger

  • 1 tsp salt

  • 1 tsp cinnamon

  • 2 tsp pure vanilla


Instructions

1    Add 1 cup raw quinoa to a medium-sized pot with 2 cups water.
Bring the water to a boil. Cover the pot, reduce the heat to low-medium, and simmer the quinoa for 15 minutes. Then turn off the stove and leave the pot covered for another 5 minutes. Remove the cover and fluff the quinoa with a fork.


2  Prep the dried fruits by cutting them into ¼” dice if needed, then place them in a pot, cover with water, bring to a boil, turn off the heat, cover, and let the fruit rehydrate.


3  Preheat the oven to 350°F.


4  Drain the fruit and divide it and the grain in half, reserving some for later.


5  In a bowl, whisk together the eggs, milk, coconut oil, maple syrup, seasonings, and vanilla, then add half the drained fruit and quinoa and blend together in a blender, bullet, or food processor.


6  Fold the reserved quinoa and fruit back into the puree for texture.


7  Line a 9-inch baking tray with parchment paper and spray it with cooking spray.


8  Bake for 25-30 minutes.


9  When done, remove from the oven and let cool completely before cutting into squares.
