Apple Butter


You can use this apple butter in preparations and as a condiment, and although Ayurveda doesn't normally recommend mixing fruit with other foods, adding ginger and cooking the apples makes combining them acceptable.
Ingredients
6 apples, cored and coarsely chopped (I like Fujis)
½ cup apple juice
1 Tbl. maple syrup
½-1 Tbl. grated fresh ginger
1 tsp of this spice mix (1 tsp cinnamon, ginger, and cardamom)
Directions:
1. In a medium-sized saucepan, combine the chopped apples, apple cider or juice, and maple syrup.
2. Heat on medium-low heat, adding the ginger and spice mix while it warms
3. Simmer for 30 minutes.
4. Remove from heat. If you like it chunky, separate into two portions and, with a hand blender or food processor, puree half until smooth, then fold in the chunky portion.
5. Let cool and store in an airtight container.
