Ezekiel Bread

Ezekiel bread is a nutrient-rich type of bread made from sprouted grains such as wheat, barley, millet, and spelt, combined with legumes like beans, lentils, and soybeans. The sprouting process involves soaking grains and legumes in water and rinsing them repeatedly to encourage germination. This process boosts nutrient availability, lowers glycemic levels, and improves digestibility.

 

This bread is a good source of fiber, protein, zinc, vitamin B6, folic acid, calcium, magnesium, and iron, and contains antioxidants that help balance pH, break down starches and carbs, reduce cholesterol, and fight inflammation. Its lower sodium content supports blood pressure control, and sprouting can decrease its glycemic index, allowing for a gradual release of glucose into the blood.

 

Since it is made without flour, the sprouted ingredients are mashed into dough before baking. Ezekiel bread contains no artificial additives but does include gluten from wheat, barley, and spelt, making it unsuitable for those with celiac disease or gluten intolerance. Variations include cinnamon raisin, flax, and sesame, as well as low-sodium versions.
