Roasted Root Vegetables

Root vegetables have grounding and nourishing properties, stemming from their deep roots, which absorb the earth's stable, dense, and heavy qualities. Ayurvedically, Vata needs sweet, moist foods, along with warming spices and oils. Pitta benefits from more cooling or slightly heating vegetables with less heating spices, and Kapha favors pungent, heating, and more stimulating vegetables with less oil and heating spices.

I read the post about root vegetables, and it made me want to eat carrots and beets while learning how they grow underground and help your body. Last fall when I had lots of schoolwork piled up, I even had to do my English communication exam during short breaks between cooking and homework, and it felt odd but real. It reminded me that good planning helps me finish tasks and still enjoy simple things.
